Cilantro Yogurt Sauce
This delectably refreshing sauce goes with almost any savory dish you could think of, from curries, kebabs and and lamb shanks to nachos, tacos and buddha bowls.

Ingredients

cup
cilantro
about 1 bunch
1
cup
plain Greek yogurt
1
cup
spinach
optional but recommended
2 tsp
lemon juice
about 1/2 a lemon
2
cloves
garlic
1/2
tsp
salt

tsp
olive oil
optional
Instructions
Juice the lemon until you have 2 tsp (about half a lemon). Add to food processor.
Add remaining ingredients. When adding garlic, mincing it first is helpful to avoid little chunks of garlic, but optional.
Process and adjust salt as needed.
Notes
Spinach is optional but adds lots of nutrition without changing the flavor, plus it adds some nice green color.
