Mediterranean Chickpea Salad

This quick easy salad is delicious as a meal or a side. Packed full of fruits, veggies and olive oil, it's a classic healthy Mediterranean dish.

Ingredients

Salad Ingredients

  • 2 can cans chickpeas (or 3 cups cooked and drained)
  • 1 medium English cucumber
  • 1 red bell pepper
  • 1/2 red onion about 3/4 cup
  • 1/2 cup olives (or more, to your taste)
  • 1/4 cup parsley

Dressing Ingredients

  • 1 lemon about 1/4 cup or a little less
  • 1/2 cup olive oil
  • 1 tsp sugar (optional, but cuts the vinegar nicely)
  • 1/2 tsp yellow mustard
  • salt and pepper to taste

Instructions

  • Combine all salad ingredients in a medium bowl. 
  • In a jar or small bowl, shake or whisk together all dressing ingredients. Pour over salad. 
  • Serve immediately or refrigerate for a couple hours to further improve flavor. Can be stored in the fridge 4-5 days.
